Add a sprinkle of walnuts and 100g of strong crumbled cheddar cheese. Mix them gently into the flour and then stir in two beaten eggs and around 150 ml of buttermilk, until the mixture just comes together as a soft pliable dough. As soon as this happens, turn it onto a floured surface, pat it gently until the dough is around 3 cm thick and then cut scones using a ring cutter. Place the scones gently onto a non-stick baking sheet and brush them with a little buttermilk before adding a sprinkle of extra cheese.
